600 g pork fillets , piece
6 tablespoons sweet chili sauce
finely grated lime rind
1 juice lime
1 tablespoon olive oil
1 -2 garlic clove , peeled and crushed
1 teaspoon ground cumin
1 teaspoon ground coriander

Instructions

1.Preheat the oven to 180C/Gas 4.

4.Cover and refrigerate for at least 30 minutes, or up to overnight.

6.Bake for 25-30 minutes, or until the pork is cooked through.
7.Serve hot with a side salad or roasted vegetables.
