Ingredients

1 teaspoon oil
1 large onion , chopped
3 garlic cloves , crushed
100 g lean bacon , diced
1 red capsicum , diced
1 pinch chili flakes
3 cups diced pumpkin
2 cups chicken stock
1 sprig rosemary
400 g lite evaporated milk
300 g macaroni or 300 g other small pasta
90 g grated low-fat cheese
salt and pepper
1 cup fresh wholemeal breadcrumbs ( optional )
extra cheese , for topping
This One Pan Pumpkin Pasta Bake is a delicious take on traditional pasta bake dishes, with the addition of pumpkin and a touch of spice. Instructions

1.Preheat oven to 200°C. Grease a large baking dish with non-stick spray.
2.Heat oil in a large frying pan, add onion and garlic, and cook until onion is soft.
3.Add bacon, capsicum, and chili flakes to the pan, stirring for 2-3 minutes to cook the bacon.
4.Add pumpkin, chicken stock, and rosemary sprig. Cover and bring to the boil, then reduce heat to simmer for about 10-15 minutes or until pumpkin is tender.
5.Remove the rosemary sprig and add macaroni/pasta to the pan. Bring to a simmer and cook for 8-10 minutes or until pasta is tender.
6.Stir in evaporated milk, grated cheese, salt, and pepper.
7.Pour the mixture into the prepared baking dish. If using breadcrumbs, sprinkle on top with extra cheese.
8.Bake for 20-25 minutes or until golden and bubbly.
