1/2 cup caster sugar , also known as berry sugar
1/2 cup all-purpose flour
1/2 cup desiccated coconut
1/4 cup almond meal
4 egg whites
125 g butter , melted
1 cheek fresh mango , roughly chopped
1/4 cup dried cranberries
icing sugar , for dusting

Instructions

1.Preheat the oven to 180°C/350°F.
2.In a large mixing bowl, whisk together the caster sugar, all-purpose flour, desiccated coconut, and almond meal until well combined.
3.In a separate bowl, whisk the egg whites for about 1-2 minutes or until frothy.
4.Add in the melted butter and mix well.
5.Pour the wet mixture into the dry mixture and fold until everything is well combined.
6.Gently fold in the fresh mango and dried cranberries.
7.Grease a friand tin or muffin tin and fill each cavity with the batter until about 3/4 full.
8.Bake for 15-18 minutes or until the edges are golden brown.
9.Allow to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
10.Dust with icing sugar before serving.
