1 teaspoon dried oregano
olive oil
1 tablespoon sundried tomato tapenade
1/2 cup cream

Instructions

1.Preheat the oven to 400°F (200°C).
2.Cut the roma tomatoes in half and toss in olive oil, salt, and pepper. Put on a large roasting pan cut side up.
3.Add canned tomatoes, garlic, dried basil, dried oregano, and sundried tomato tapenade. Mix them all together in the pan.
4.Roast all the ingredients for 1 hour until brown and caramelised around the edges.
5.Let the mixture cool down, then transfer it to a blender and blend until smooth.
6.Pour the mixture into a pot, add cream and simmer until heated through.
7.Enjoy hot, garnished with fresh basil leaves.
