Ingredients

6 large mild red chilies , seeds removed
1 tablespoon roughly chopped gingerroot
1 onion , quartered
3 teaspoons shrimp paste
1/3 cup brown sugar
2 tablespoons vegetable oil
650 g beef , strips
4 scallions , sliced
200 g green beans , trimmed
Chilli Jam Beef Stir Fry is a Thai-inspired dish that will make you fall in love with the mix of sweet & spicy flavors. The dish is prepared with beef slices, green beans, scallions, and a delicious homemade chili jam sauce. Instructions

1.To make the chilli jam, blitz the chilies, ginger, onion, shrimp paste, brown sugar and 60ml of water in a food processor until it makes rough paste.
2.Heat oil in a wok, over a high heat, and add beef strips and stir-fry until the beef is sealed, remove the beef
3.Place the jam mixture into the wok and stir over medium heat for about 6 minutes, or until it has a jammy consistency and the caramelization is consistent.
4.Put the green beans to boil in a saucepan with salted water, cook for 3-4 mins, then drain and rinse in cold water.
5.Add the beef and the scallions to the wok and stir fry for about 2-3 minutes and toss in the green beans. Ready to serve on hot steaming rice.
