2/3 cup pumpkin puree
1 pinch cumin
1 cup of chopped chicken
2 sticks celery , chopped
2 shallots , chopped
1/4 cup mayonnaise
1/4 cup light sour cream

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a saucepan, melt butter over medium heat. Add flour and skim milk powder, whisking until smooth. Gradually add water, stirring constantly until well combined. Remove from heat and let cool slightly.
3.Beat egg whites until stiff peaks form. In a separate bowl, beat egg yolks until thick and pale. Fold yolks, pumpkin puree, and cumin into egg whites until just combined; taking care not to overmix.
4.Spray a baking dish with cooking spray. Spread pumpkin mixture evenly over the entire surface of the dish. Sprinkle with chopped chicken and celery.
5.Roll up tightly, starting at one end, and transfer to the prepared baking dish. Bake for 20-25 minutes or until golden brown and the chicken is cooked through. Remove from oven and set aside to cool.
6.In a small bowl, mix together shallots, mayonnaise, and sour cream. Spread evenly over the top of the cooled roulade and season with black pepper. Cut into slices and serve.
