Ingredients

3 egg whites
3/4 cup caster sugar
1 tablespoon ground hazelnuts
250 g light cream cheese
2 tablespoons passion fruit pulp
250 g seasonal fresh berries ( or however much you want to use )

Instructions

1.Preheat your oven to 150°C.
2.Whisk the egg whites in a large mixing bowl until they form stiff peaks.
3.Slowly add the caster sugar and whisk until the mixture is shiny and stiff.
4.Fold in the ground hazelnuts.
5.Line your baking tray with baking paper and shape the mixture into two meringues of equal size.
6.Bake for 60-75 minutes until the meringues are crisp on the outside and mallow on the inside.
7.Let them cool completely.
8.In a small mixing bowl, whisk together light cream cheese and passion fruit pulp until smooth.
9.Place one meringue on a serving dish, spread half of the cream cheese mixture over the meringue.
10.Add a layer of fresh berries.
11.Top with the second meringue and spread the remaining cream cheese mixture over the top.
12.Finish by adding a last layer of fresh berries.
13.Serve chilled.
