Ingredients

1/2 medium butternut pumpkin , peeled , deseeded and cut into 1 cm cubes ( about 650g )
40 ml olive oil
45 g pine nuts
1 small red onion , thinly sliced
1 teaspoon paprika
1 bunch english spinach , trimmed , washed
1 orange , juiced
120 g feta

Instructions

1.Preheat oven to 200°C / 180°C fan-forced.
2.Place pumpkin on baking tray and drizzle with half the olive oil and season with salt and pepper. Bake for 25 minutes or until golden brown.
3.Spread pine nuts over a separate baking tray and bake for 2-3 minutes or until golden brown. Set aside.
4.In a frying pan over medium heat, add the remaining olive oil and cook the onion until soft and caramelized. Add paprika and cook for an additional minute. Set aside.
5.In a large bowl, combine the spinach, caramelized onion, baked pumpkin, pine nuts, orange juice, and crumbled feta. Toss gently to combine.
6.Serve immediately and enjoy!
