8 pork cutlets

1/2 cup stock
1 fennel bulb

Instructions

1.Heat olive oil and butter in a large skillet on medium heat until the butter is melted.
2.Season the pork cutlets with salt, freshly ground black pepper and fresh thyme leaves on both sides, using your fingers to press the herbs onto the meat.
3.Add the pork cutlets to the skillet and cook them for 4-5 minutes per side or until they are golden brown and cooked through.
4.Remove the pork cutlets from the skillet and set them aside, covering with foil to keep them warm.
5.Add garlic to the skillet and stir it for a few seconds until fragrant.
6.Pour balsamic vinegar and stock into the skillet while stirring.
7.Add fennel bulb that is cut into wedges to the skillet and let it cook for a couple of minutes until slightly softened.
8.Squeeze lemon juice over the top and stir everything together.
9.Put the pork cutlets onto plates and spoon the sauce over the top. Serve with mashed potatoes on the side.
