3 leeks , thinly sliced ( white part only )
3 zucchini , coarsely grated
2 garlic cloves , crushed
1/4 cup chopped of fresh mint
2 tablespoons chopped dill
8 eggs , beaten
150 g marinated feta cheese , drained , crumbled
sliced red onion , and
tomatoes , to serve

Instructions

1.Cook rice according to package instructions and set aside.
2.Preheat the oven to 180°C (350°F) and grease a 22 cm (9 inch) round cake tin with olive oil.
3.Heat the remaining olive oil in a frying pan over medium heat and cook the leeks for 5 minutes, or until softened.
4.Add the zucchini and garlic, and cook for another 5 minutes, or until the zucchini is softened.
5.Add the cooked rice, mint, and dill to the pan and stir to combine.
6.Whisk the eggs in a bowl and season with salt and pepper.
7.Add the egg mixture to the pan and stir to combine with the vegetables.
8.Pour the mixture into the prepared cake tin.
9.Top with crumbled feta cheese and bake for 25-30 minutes, or until golden brown and set.
10.Serve with sliced red onion and tomatoes. Enjoy!
