Ingredients

2/3 cup dried apricot , chopped
125 g butter , room temperature
3/4 cup caster sugar
2 eggs
3/4 cup plain flour
1 cup self-raising flour
1/3 cup milk

Instructions

1.Preheat the oven to 180C/350F. Grease and line a 10 x 34cm (base measurement) deep nut roll tin with baking paper.
2.Beat butter and sugar until creamy. Beat in eggs, 1 at a time, until combined. Resift flours; stir into butter mixture alternately with milk in two batches. Stir in apricots.
3.Spoon mixture into tin. Smooth surface. Bake for 45-50 minutes or until a skewer inserted into the centre of cake comes out clean. Stand for 5 minutes in tin. Turn onto a wire rack to cool.
