Ingredients

12 marshmallows ( or large Glace cherries )
5 cm strap licorice
24 rainbow chocolate chips
12 chocolate candy melts ( I use Coles farmland brand )
200 g baking chocolate
50 g Copha
24 almonds , flakes ( or one ice cream wafer )
These chocolate mice with licorice tails are a fun twist and take on the classic chocolate mousse recipe. Instructions

1.Line a baking tray or flat serving dish with baking paper.
2.Cut the licorice into 10cm strips. Place two strips each about 4-5cm apart on the lined tray, leaving about 4-5cm of licorice overhanging on either end.
3.Set a marshmallow or cherry each on the overhanging end of the licorice strips.
4.Gently melt the candy melts and spread a blob onto the top of each marshmallow/cherry, slightly pushing the chocolate down around the sides of the marshmallows.
5.Quickly place a chocolate chip on the wet candy melts so that the chocolate chip is standing upright, pushed down around the marshmallow, held up by the candy melts.
6.Let these “tails” set hard.
7.Chop ample amount of almonds roughly enough to make it spread with your fingers.
8.Melt the copha in a large saucepan over a low hea
9.Take off the heat and ad the chocolate chunks and almonds. Stir until all ingredients in the bowl are blended together.
10.Let it cool and then spoon it evenly into little chocolate shells of your choice.
11.Take the “tails” and remove from the tray. Bash your tray down on a table top so that the “tails” gently fall off onto the tray. Arrange these chocolate mice in front of each a filled chocolate shell with its tail sticking out.
12.Add a small wafer to each almond shaving tail.
