Ingredients

6 ounces portabella mushrooms
1 1/2 ounces butter
1 -2 teaspoon curry powder , dependent on taste and heat of powder
salt , to season
1 avocados
3 tablespoons finely chopped green onions ( spring )
3 eggs
3/4 cup heavy cream
1/4 teaspoon salt , extra
white pepper
3 tablespoons dry white wine
1 tablespoon tomato ketchup
Avocado Mushroom Quiche is a great way to start your day with a healthy and scrumptious breakfast. This quiche is loaded with juicy mushrooms and avocado goodness. Instructions

1.Preheat oven to 375°F.
2.Clean and slice the mushrooms into small pieces and sauté them in a saucepan with butter over medium heat, until they release their liquid and reduce in size.
3.Add curry powder and a pinch of salt to the mushrooms and continue to fry on medium heat for about 3 minutes.
4.While the mushrooms are cooking, peel and dice an avocado and add it to the mushrooms. Stir in the green onions and mix well.
5.Grease a 9-inch glass pie plate with butter or cooking spray then transfer the mushroom and avocado mixture into the pie plate. Spread evenly.
6.In a bowl, beat the eggs, cream, extra salt, white pepper, dry white wine, and ketchup. Pour this mixture into the pie plate.
7.Bake for 30-35 minutes, or until the quiche is golden brown in color and the center is set. Cool for at least 5 minutes before serving.
