Ingredients

1 1/2 cups plain flour
125 g butter
2 egg yolks
2 tablespoons water , approximately
400 g blueberries
2 medium mangoes ( about 860g )
250 g cream cheese , softened
1 medium mango , chopped ( about 430g )
1/3 cup icing sugar
2 tablespoons lemon juice
250 g strawberries
1 1/2 tablespoons icing sugar
1 teaspoon Grand Marnier
The Blueberry Mango Tartlets are a delightful dessert that promises to impress and satisfy your sweet tooth. Instructions

1.In a food processor, pulse flour and butter until mixture resembles fine sand.
2.Add egg yolks, one at a time, and process until dough just comes together.
3.Add water, a little at a time, until mixture forms a smooth dough.
4.Wrap dough in plastic wrap and chill in fridge for 30 minutes.
5.Preheat oven to 200°C. Grease ten 8cm (base measurement) loose-based tart pans.
6.Divide dough into 10 and roll out each portion to 3mm-thick. Line each pan with pastry and trim edges. Prick bases with a fork. Chill for a further 10 minutes.
7.Line pastry with baking paper and fill with baking weights or uncooked rice. Bake for 10 minutes. Remove paper and weights or rice. Bake for a further 10 minutes or until light golden. Cool completely.
8.In a large saucepan, place 200g blueberries and 1 peeled, chopped mango. Cook over a low heat for 10 minutes, until fruit has broken down. Chill.
9.In an electric mixer, beat cream cheese, icing sugar and lemon juice until smooth. Spoon into cooled tart cases.
10.Top with remaining blueberries, sliced mango and sliced strawberries. Brush sliced mango with mixed Grand Marnier.
