Ingredients

225 g dried quick cook pasta
250 g mascarpone
1 teaspoon Dijon mustard
175 g mature cheddar cheese , grated
6 sun-dried tomatoes , finely chopped
2 tablespoons fresh snipped chives
salt & freshly ground black pepper
Super Speedy Spaghetti Bake is a delicious twist on a classic pasta bake. It's a quick and easy recipe that can be on the table in under 30 minutes, perfect for weeknight dinners. This dish uses quick-cook spaghetti, making it a great option when you are short on time. The mascarpone adds a creamy texture and richness, while the cheddar cheese and sun-dried tomatoes provide a depth of flavour. Instructions

1.Preheat the oven to 200C/180C Fan/Gas 6.
2.Cook the pasta according to pack instructions (usually 2-3 minutes) then drain and return it to the pan.
3.Add the mascarpone, mustard, 150g of the cheddar, the sun-dried tomatoes, chives and some salt and pepper to the pasta.
4.Stir until everything is combined then spoon into a 20x30cm ovenproof dish.
5.Sprinkle over the remaining cheddar and bake for 20 mins until golden and bubbling.

Super quick and easy to make, perfect for a busy weeknight dinner.

Uses mostly store-cupboard ingredients that can be easily adapted for personal taste.

CONS

This dish is quite rich due to the high-fat content of mascarpone and cheese.
