125 g butter , coarsely chopped
0.5 can sweetened condensed milk
250 g Marie biscuits , crushed
1 cup coconut
1/4 cup slivered almonds or 1/4 cup pistachios , chopped
1 teaspoon grated lemon rind
1/2 - 1 1/2 teaspoon lemon juice
1 1/4 cups icing sugar
2 tablespoons lemon juice

Instructions

1.Line a 20cm square cake tin with non-stick baking paper.
2.Place butter and condensed milk in a heat-proof bowl. Microwave for 1 minute or until melted and combined. Stir well.
3.In another bowl, mix the crushed biscuits, coconut, almonds or pistachios (if using), and lemon rind.
4.Add the melted butter mixture and lemon juice (add 1/2 a teaspoon to start and add more if needed). Mix until well combined.
5.Sift the icing sugar into the bowl and mix well.
6.Press the mixture into the cake tin and smooth the surface with the back of a spoon or an icing smoother. Chill for 1 hour or until set.
7.Meanwhile, mix together the lemon juice and remaining icing sugar to make the icing.
8.Cut the slice into squares and drizzle with the icing. Leave to set before serving.
