Instructions

1.Preheat the oven to 180°C (160°C fan forced). Grease and line a 9 x 5-inch (23 x 13 cm) loaf pan with baking paper.

3.In a large bowl, mix together the self-raising flour, desiccated coconut, and caster sugar until well combined.
4.In a separate bowl, whisk together the ayam light coconut milk, eggs, and vanilla extract until well combined.

6.Combine the wet and dry mixtures, stirring until just combined.
7.Pour the mixture into the prepared pan and bake for 50-60 minutes, or until a skewer inserted into the center comes out clean.
