Ingredients

2 tablespoons olive oil
1 cup chopped carrot
1 cup chopped onion
1 cup chopped celery
4 cloves garlic , finely chopped
1 small red chile , finely chopped
2 cans chopped Italian tomatoes
2 liters vegetable stock or 2 liters water
2 bay leaves
2 tablespoons fresh oregano , chopped
1 cup puy lentils , rinsed
1 teaspoon salt
fresh ground black pepper
1/2 cup chopped parsley
1/4 cup olive oil

Instructions

1.Heat the olive oil in a large pot over medium heat.
2.Add the chopped onion, carrot, celery, garlic and red chile, saute until the vegetables are soft and starting to caramelize.
3.Add the canned tomatoes and 2 liters of vegetable stock or water, bring to a simmer.
4.Add the bay leaves, chopped oregano, and rinsed puy lentils and continue to simmer until the lentils are tender.
5.Season with salt and black pepper to taste.
6.Meanwhile, preheat the oven to 200C/180C fan/gas 6.
7.Mix the chopped garlic, parsley, olive oil in a small bowl.
8.Cut the baguette into thin slices and brush with garlic oil mixture. Sprinkle grated parmesan cheese on top and season with salt and black pepper.
9.Bake for 10-15 mins until the slices are golden in color.
