Ingredients

2 apples , peeled and finely chopped
1 cup chopped dates
1 teaspoon bicarbonate of soda
1 cup boiling water
1 cup sugar
1 egg
1 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon salt
60 g butter
1/4 cup pecan nuts ( optional )

1/2 cup brown sugar , firmly packed
1 -2 tablespoon milk
1/2 cup shredded coconut
Lumberjack Cake is a traditional Australian cake, sometimes called Lumberjack's Wife cake or Appalachian cake. The origins of the name are unclear, but it could have something to do with the combination of hearty ingredients, including dates, apples, nuts, and a sticky caramel-like topping. It's a great winter dessert that is sure to become a family favorite!

Instructions

1.Preheat your oven to 170°C fan-forced (190°C conventional).
2.Grease and line a 20 cm round cake tin.
3.In a large bowl, mix the chopped apples, chopped dates, and bicarbonate soda together.
4.Add boiling water and stir well. Leave to cool.
5.Beat together sugar, egg and vanilla in the same bowl until well mixed and fluffy.
6.Sift the flour and salt together and add to the mixture along with the cooled apple mixture.
7.Melt the 60g butter and add to the mixture. Stir well.
8.Pour the mixture into the prepared cake tin and bake for 45-55 minutes.
9.Remove from the oven and let it cool.
10.For the topping, mix the 60g butter, brown sugar, and milk together in a small saucepan over low heat.
11.Cook until the sugar and butter have melted and the mixture has thickened slightly.
12.Remove from heat and stir in the shredded coconut.
13.Spread the topping over the cooled cake and sprinkle the pecan nuts (if desired) on top.

It’s a crowd-pleasing cake that easily serves up to 10 people.

The combination of dates, apples, and a caramel-like topping is divine.

It’s a great way to use up apples that are past their prime.

CONS

It’s not the healthiest dessert option if you’re watching your sugar intake.
