Dundee Pies are a traditional Scottish dish that originated in the city of Dundee. They are a savory pie made with hot water pastry dough and filled with seasoned meat and onions. While there are many variations of Dundee Pies, this recipe includes the option to add pork and beans or mashed potatoes for an extra boost of flavor and texture. These pies are a perfect meal for a cold winter's day or a cozy dinner with friends and family.

Instructions

.Preheat the oven to 375°F.
.For the hot water pastry dough, mix the plain flour and salt together in a mixing bowl. Melt the beef drippings or lard with water in a saucepan, then pour the mixture over the flour and mix in with a wooden spoon.
.When the mixture has cooled, knead it on a floured surface until it is smooth and elastic. Cover and let sit for 30 minutes.
.Combine the meat, onion, Worcestershire sauce, pepper and enough meat stock to moisten well.
.Divide the pastry dough into 6 equal portions. Roll each portion out into an oval shape approximately 7x9 inches and 1/4 inch thick.
.Spoon the meat mixture into the center of each oval, and top with a spoonful of pork and beans and a dollop of mashed potatoes, if desired. Fold the sides of the pastry over to form a rectangle, pinching the edges together to seal. Brush with an egg yolk mixture.
.Place the pies on a baking sheet and bake for 40 minutes.
.Serve hot and enjoy!
