6 eggs
3 teaspoons butter
100 g baby rocket
30 g parmesan cheese , shaved
1 tablespoon olive oil
200 g sliced smoked salmon
1/2 cup cream cheese spread
1/4 cup dill , chopped
6 hoagie rolls , split lengthways
Smoked Salmon Omelette Rolls are a delicious and healthy breakfast option. With tender smoked salmon, rocket and parmesan, this omelette is filled with flavor. The omelette is then rolled up and sliced into small pieces, perfect for a hearty breakfast that can be eaten on the go. Instructions

1.Start by beating the eggs in a bowl. Heat a teaspoon of butter in a large non-stick frying pan over medium heat until melted. Add half of the egg mixture and swirl to coat the base.
2.Cook for 1-2 minutes or until the base is set. Use a spatula to lift the omelette at the edge and let the uncooked egg flow underneath to cook.
3.Arrange half the rocket, parmesan cheese and salmon over the omelette. Use a spatula to fold the omelette in half.
4.Slide the omelette onto a clean work surface. Roll up tightly, from one end to the other. Cut into three pieces and set aside on a serving platter.
5.Repeat with the remaining butter, egg, rocket, cheese and smoked salmon to make a second omelette. Refrigerate for 10 minutes to firm up.
6.Mix the cream cheese and dill in a small bowl until well combined. Spread the roll with a little of the cream cheese mixture just before serving.
