Ingredients

4 egg whites , room temperature
4 tablespoons cold water
1 cup caster sugar ( superfine sugar )
1/4 cup powdered sugar
1 pinch salt
1/2 teaspoon vanilla
1 teaspoon vinegar
3 teaspoons cornstarch
fresh whipped cream
fruit , of your choice ( kiwi , berries , pineapple , etc )

Instructions

1.Preheat the oven to 350 degrees F (175 degrees C).
2.Beat the egg whites and salt together in a bowl until stiff peaks form.

4.Add the cold water, powdered sugar, vanilla, vinegar, and cornstarch, folding gently until just combined.
5.Line a baking sheet with parchment paper and spoon the meringue mixture onto the sheet, forming a circular shape and creating a shallow well in the center.
6.Reduce the heat to 250 degrees F (120 degrees C) and bake the meringue for 1 hour or until crisp on the outside and soft on the inside.
7.Turn off the heat and allow the meringue to cool completely in the oven.
8.Once cooled, spread fresh whipped cream over the top of the meringue and decorate with fresh fruit.
