Jo's Christmas Crackle is an Australian classic, usually served during the holiday season. This dish features a succulent ham with an irresistible, crispy rind. While it may seem daunting to some, each step is vital to the dish's success. The scored rind allows the seasoning to penetrate the meat, while the lower oven temperature helps ensure the ham doesn't overcook and dry out. The final step of increasing the temperature and crisping the rind is what makes this dish stand out. Grab your apron and get ready to impress your guests with this holiday treat.

Instructions

3.Massage salt into the scored rind.
4.Place the ham in a large roasting tin and pour in enough water to cover the base of the tin.
5.Roast for 20-25 minutes per 500g until the internal temperature reads 60°C.
6.Increase the oven temperature to 220°C and roast for an additional 20 minutes or until the crackle is crispy and golden
