Ingredients

20 spring baby artichokes , about the size of a golf ball ( or large jar , this works fine )
3 tablespoons extra virgin olive oil
1 finely chopped red onion
2 minced fresh spring garlic heads
1/2 cup dry white wine
500 g tagliatelle pasta noodles
chopped of fresh mint
grated parmesan cheese

Instructions

1.Clean and trim the artichokes removing the tough outer leaves. Cut them into halves or quarters, depending on the size.
2.In a large pan, heat the olive oil over medium heat. Add the onion and garlic and cook until the onion is soft and translucent.
3.Add the artichokes to the pan and stir to coat them in the onion and garlic mixture. Season with salt and freshly ground black pepper.
4.Pour in the white wine and cook for a couple of minutes until the alcohol is evaporated.
5.Fill the pan with enough water to cover the artichokes and bring to a simmer. Cover and cook for about 20 minutes or until the artichokes are soft and tender.
6.While the artichokes are cooking, bring a large pot of salted water to a boil. Cook the tagliatelle pasta noodles according to the instructions on the package until al dente.
7.Drain the pasta, saving a cup of the cooking water.
8.Add the mint to the artichokes and mix well. Stir in the pasta and some of the reserved cooking water until everything is well coated. Serve with grated parmesan cheese on top.
