Ingredients

1 medium onion , finely chopped
200 g 95 % lean ground beef
200 g ground turkey
2 garlic cloves , crushed
1 medium carrot , grated on the finest holes of your grater
2 sticks celery , diced finely
1/2 red capsicum , finely diced
140 g tomato paste
1/2 cup dry white wine
2 teaspoons brown sugar
1 can whole canned tomatoes , juices reserved , chopped
1 teaspoon italian mixed herbs
1 teaspoon smoked paprika
1/8 teaspoon mixed spice
500 ml low sodium chicken broth
fresh ground black pepper
2 tablespoons shredded basil leaves
Bolognese sauce is a classic Italian dish made with ground meat and tomato sauce. This version combines 95% lean ground beef and ground turkey with an array of vegetables to create a healthier sauce that is just as comforting as the original. The addition of Italian seasoning, smoked paprika and mixed spice adds depth of flavour to the dish. This recipe makes a large batch, perfect for feeding a crowd or leftovers throughout the week.

Instructions

1.Heat a large pot over medium heat and spray it with oil.
2.Add the onion and cook until softened, stirring frequently.
3.Add in the ground beef, turkey and garlic, stirring frequently until browned.
4.Add in the carrot, celery and red peppers and cook for 5 minutes.
5.Add tomato paste and cook for 1 minute, then add white wine, brown sugar, canned tomatoes, Italian seasoning, smoked paprika, mixed spice and chicken broth. Season with black pepper.
6.Bring to a boil, then turn the heat down to low and let simmer for 1 hour or until the sauce has thickened.
7.Before serving, stir in the basil and sprinkle some on top.
