8 sheets phyllo pastry
220 g Turkish Delight , bars cut in half lengthways
40 g butter , melted cooled
1/2 cup water
1 tablespoon rose essence
1 cup caster sugar
1/2 cup pistachios , chopped

Instructions

1.Preheat your oven to 175°C and line a baking tray with parchment paper.
2.In a medium-sized saucepan, combine the water, caster sugar, and rose essence over medium heat until the sugar has completely dissolved.
3.Increase the heat and bring the syrup to a boil, then reduce the heat and simmer for 10 minutes until it thickens.
4.Remove the saucepan from the heat and stir in the chopped pistachios.
5.Take one phyllo sheet and brush it with melted butter. Repeat with the other sheets.
6.Cut the filo pastry stack into 8 rectangles.
7.Take one piece of Turkish Delight and place it at the bottom edge of a filo pastry rectangle.
8.Spoon some of the pistachio mixture over the Turkish Delight.
9.Roll the pastry up tightly, tucking the sides in as you go.
10.Repeat with the remaining Turkish Delight and filo pastry rectangles.
11.Place the rolls onto the prepared baking tray and brush with any leftover butter.
12.Bake for 20-25 minutes or until golden and crisp.
