Ingredients

2 teaspoons olive oil
1/2 medium onion , finely chopped
1 garlic clove , crushed
500 g butternut pumpkin , peeled and finely chopped ( final result should be approx 250g )
1/2 teaspoon cumin
1/4 teaspoon allspice
2 teaspoons chopped coriander
25 g soft feta , crumbled
3 sheets puff pastry , thawed
1 egg , beaten with 1 t of water
2 tablespoons pine nuts , chopped
1 cup water
salt , to taste
pepper , to taste

Instructions

1.Preheat oven to 200°C.
2.Heat olive oil in a pan over medium heat.
3.Add onion and garlic, cooking until onions become translucent for around 2-3 minutes.
4.Add butternut pumpkin, cumin, allspice, salt and pepper to taste.
5.Cook until the pumpkin becomes soft and the mixture thickens.
6.Mix in feta cheese, pine nuts and chopped coriander.
7.Cut pastry sheets into quarters and place 1 tablespoon of the mixture on each piece of pastry.
8.Fold pastry over the filling, sealing the edges to form a small pastie.
9.Brush each pastie generously with the egg and water mix.
10.Place pasties onto a baking tray lined with baking paper and bake for 20 minutes or until golden brown.
