Ingredients

50 g dark chocolate
300 ml cream
3 teaspoons instant coffee granules
1 tablespoon warm water
1 egg white
1/4 cup caster sugar
1/3 cup scorched almonds

Instructions

1.Break the chocolate into small pieces and place in a heatproof bowl.
2.Put the bowl over a pan of gently simmering water, making sure the bottom of the bowl doesn't touch the water.
3.Heat until the chocolate has melted, then remove from heat and set aside to cool.
4.Pour the cream into a mixing bowl and whisk until thick, but not stiff. In a separate bowl, mix together the instant coffee granules and warm water until the coffee dissolves.
5.Beat the egg white in a separate bowl using an electric mixer until stiff peaks form. Gradually add in the caster sugar and continue to beat until the mixture is thick and glossy.
6.Fold the melted chocolate and coffee mixture gently into the whipped cream until well combined. Then fold in the egg white mixture.
7.Spoon the mixture into four serving dishes and sprinkle over the scorched almonds. Chill for at least 2 hours before serving.
