500 g loin lamb
4 lamb , cutlet bones
2 mint leaves
1 sprig rosemary
1 sprig marjoram
1 sprig parsley
1/2 cup breadcrumbs
1/2 teaspoon Worcestershire sauce
1/2 onion , peeled
1 egg
salt & pepper
4 sheets puff pastry
400 ml madeira wine , sauce
Jolly Jumbuck in a Tuckerbag is a traditional Australian lamb dish that dates back to the early days of sheep farming in the country. The name comes from the popular Australian folk song 'Waltzing Matilda', in which a 'Jumbuck' (a sheep) is stolen and placed in a 'Tuckerbag' (a bag for storing food). This hearty meal consists of lamb mince and cutlets wrapped in buttery puff pastry and served with a rich madeira wine sauce. It is a beloved dish that has been passed down through generations of Australian families.

Instructions

1.Preheat the oven to 200C/180C fan-forced.
2.In a food processor, combine the lamb loin, lamb cutlet bones, mint, rosemary, marjoram, parsley, breadcrumbs, Worcestershire sauce, onion, egg, salt, and pepper. Process until a fine mince forms.
3.Cut each pastry sheet in half and place a quarter of the lamb mixture on one side of each pastry.
4.Brush the edges of the pastry with water and fold over to enclose the filling. Pinch the edges together to seal.
5.Place the parcels seam-side down on a baking tray lined with baking paper. Brush with a little egg wash and bake for 25-30 minutes until the pastry is golden brown and crisp.
6.While the parcels are cooking, make the sauce by combining the madeira wine and stock in a small saucepan over high heat. Bring to the boil, then reduce the heat and simmer for 10 minutes or until the liquid has reduced by half.
