1 onion , finely chopped

1/2 teaspoon butter
sea salt , to taste

3 tablespoons unsalted butter
3 large eggs
1 1/2 cups cream , low-fat is fine
1/4 cup grated tasty cheese , plus a little more
grated tasty cheese , to sprinkle on top of each tart
1 pinch ground nutmeg
olive oil flavored cooking spray
frozen puff pastry sheet

Instructions

1.Preheat your oven to 200°C (fan). Line a 12-cup muffin tray with squares of baking paper or spray with olive oil flavored cooking spray.
2.In a medium saucepan, combine the water, leeks, onion, garlic, and butter. Cook over medium heat until the leeks are soft.
3.Season the leeks with salt and pepper to taste.
4.In a large mixing bowl, whisk together the eggs, cream, grated cheese, nutmeg, and a little more salt and pepper.
5.Add the cooled leek mixture to the egg mixture and mix well to combine.
6.Roll out the puff pastry sheet on a floured surface and cut out 12 circles to fit the muffin cups. Gently press the pastry into the cups and prick the bottoms with a fork.
7.Spoon the egg and leek mixture into the pastry cups until they are almost full.
8.Sprinkle a little extra cheese on top of each tart.
9.Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool slightly before serving.
