Ingredients

4 egg whites
1 cup caster sugar
1 teaspoon vanilla essence
1 tablespoon lemon rind , grated
2 tablespoons lemon juice
1/4 cup caster sugar

Instructions

1.Prepare a baking tray and preheat your oven to 150°C.
2.Beat egg whites in a bowl with an electric mixer until soft peaks form.
3.Gradually add caster sugar, beating well until the sugar dissolves.
4.Fold in vanilla essence and grated lemon rind.
5.Place baking paper on a baking tray and spoon the egg mixture onto the paper creating 8 circles (about 5cm in diameter).
6.Using a spoon, make a hollow in the centre of each circle.
7.Bake the pavlovas in the preheated oven for about 1 hour or until they are crisp and dry to the touch.
8.To make the lemon curd, whisk eggs, sugar, lemon juice and butter in a saucepan over low heat until well combined.
9.Increase heat to medium. Cook stirring constantly, for about 10 minutes or until the mixture thickens enough to coat the back of a spoon.
10.Strain mixture through a fine sieve into a clean bowl.
11.Top each pavlova with whipped cream, tropical fruits, lemon curd to serve.
