Ingredients

60 g butter , softened
1/2 cup caster sugar
1 egg , lightly beaten
1 cup self-raising flour
2/3 cup milk
85 g raspberry gelatin powder ( jello )
1 cup boiling water
1 cup cold water
3 cups desiccated coconut

Instructions

1.Preheat oven to 180°C (fan-forced).
2.Grease and line a 20 cm square cake pan with baking paper.
3.In a large bowl, cream the butter and sugar until light and fluffy.
4.Gradually beat in the egg, then fold in the flour and milk until mixture is smooth.
5.Pour mixture into prepared pan and bake for 20-25 minutes until golden.
6.Allow to cool in the pan for 5 minutes then transfer to a wire rack to cool completely.
7.Cut into small squares.
8.In a heatproof jug mix raspberry gelatin powder with boiling water and stir until the powder is fully dissolved.
9.Stir in the cold water.
10.Place the desiccated coconut in a large shallow dish.
11.Carefully dip each square of sponge cake into the cold jelly and then roll in the desiccated coconut to coat.
12.Leave to set in the fridge for 20 minutes before serving.
