Ingredients

1 kg mixed dried fruit
2 cups brewed black coffee , cooled ( I use decaff ! )
2 cups self-raising flour

Instructions

1.Preheat your oven to 150°C (300°F).
2.Grease a medium sized loaf tin.
3.In a mixing bowl, combine the mixed dried fruit and cooled black coffee.
4.Add in the self-raising flour and mix well until the batter is smooth.
5.Spoon the mixture into the prepared loaf tin and bake for 2 hours.
6.Once the fruitcake is done, remove from the oven and allow it to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
