Ingredients

2 red capsicums
6 garlic cloves
4 cups brown rice , cooked
1 can chickpeas , drained and rinsed
1 can sweet corn
1/2 cup parsley , chopped
1/2 cup basil , chopped
2 tablespoons macadamia nut oil
3 tablespoons balsamic vinegar
1 teaspoon sugar

Instructions

1.Preheat oven to 200°C.
2.Cut the capsicums into quarters and remove the seeds and membranes. Peel and crush the garlic cloves.
3.Spread capsicum and garlic on a baking tray lined with baking paper. Drizzle with 1 tablespoon of macadamia nut oil and bake for 30 minutes or until capsicum is soft. Allow to cool.
4.Cook the brown rice according to the instructions on the packet.
5.Wash and drain the chickpeas and sweet corn.
6.In a large salad bowl, add the cooked rice, chickpeas, sweet corn, parsley and basil.
7.Dice the roasted capsicum and add it to the salad bowl.
8.Mix together the remaining macadamia nut oil, balsamic vinegar and sugar in a small bowl and then drizzle over the salad.
9.Toss the salad well and let it sit for at least 10 minutes to allow the flavors to combine.
