Ingredients

20 -30 cherry tomatoes , sliced in half
1 tablespoon balsamic vinegar
2 tablespoons fine bulgur wheat
1/2 red onion , finely chopped
1 1/2 tablespoons olive oil ( ideally extra virgin )
1 clove garlic , crushed
1 tablespoon lemon juice
1/4 cup fresh parsley , finely chopped
1/4 cup mixed fresh herbs , finely chopped ( I used about 2/3 basil and 1/3 mint , but suit your own taste )
This recipe is a take on the traditional Middle Eastern salad, Tabbouleh. However, unlike the original, this recipe substitutes cracked wheat with bulgur wheat and adds balsamic vinegar to make the dressing more tangy. The result is a refreshing and flavorful side dish or topping that can be enjoyed on its own or paired with grilled meat or fish. Fresh herbs, such as parsley and mint, provide a burst of flavor and nutrients, while cherry tomatoes add a pop of color to the dish.

Instructions

1.Pour boiling water over bulgur wheat and allow to sit for 10-15 minutes. Drain off any excess water when done.
2.Mix balsamic vinegar, olive oil, garlic and lemon juice in a mixing bowl, whisking to combine well.
3.Stir in the chopped onion, sliced cherry tomatoes, chopped parsley and fresh herbs until they are well coated with the dressing.
4.Add the bulgur wheat and mix everything well together.
5.Serve chilled, either on its own as a side dish or as a topping for grilled meat or fish.
