Ingredients

350 g pumpkin , peeled , deseeded & cut into 2cm pieces
1 red onion , cut into wedges
1 red capsicum , cubed
2 medium zucchini , halved & thickly sliced
1 garlic clove , crushed
1/4 cup olive oil
250 g risoni pasta
2 tablespoons lemon juice
100 g feta cheese , crumbled
2 tablespoons pine nuts , toasted

Instructions

1.Preheat the oven to 200°C/180°C fan forced.
2.Place pumpkin, onion, capsicum and zucchini in a large roasting pan.
3.Add garlic, 1 tablespoon of olive oil and season with salt and pepper. Toss to combine.
4.Roast for 25 minutes or until tender and lightly browned.
5.Cook risoni pasta in boiling salted water, following the packet instructions.
6.Drain and rinse under cold water.
7.Place in a large bowl.
8.Add 2 tablespoons of olive oil and lemon juice. Season with salt and pepper.
9.Add roasted vegetables, feta cheese and pine nuts.
10.Toss gently to combine. Serve.
