Ingredients

2 cloves garlic , finely chopped
1 grated lemon , juice and rind of
2 teaspoons Dijon mustard
1 teaspoon fresh thyme leave , plus
4 sprigs fresh thyme leaves
8 boneless chicken thighs , with skin on
3 tablespoons cornflour
100 ml white wine
100 ml chicken stock
salt & freshly ground black pepper

Instructions

1.Preheat oven to 200°C (180°C fan) mark 6. In a large bowl, mix together chopped garlic, Dijon mustard, grated lemon rind, lemon juice, fresh thyme leaves and salt and freshly ground black pepper.
2.Add boneless chicken thighs to the mixture and toss to coat them completely. Place chicken skin-side up on a roasting tray. Roast for 30-40min until chicken is crispy and cooked through.
3.Once chicken is cooked, remove it from the oven and place it on a warm plate. Cover with foil to keep warm.
4.In a small saucepan, mix cornflour with a little cold water to make a smooth paste. Pour in white wine and chicken stock and whisk everything together. Bring to boil while stirring constantly. Reduce heat and simmer until sauce thickens to your desired consistency.
5.Pour the sauce over chicken and garnish with fresh thyme sprigs before serving.
