Instructions

12.Place the heatproof bowl over a saucepan of simmering water and whisk constantly for 15-20 minutes until thickened.
13.Remove the curd from the heat and leave to cool.
14.Whip the cream in a clean bowl until soft peaks form.
15.Spread the cream over the cooled meringue base.
16.Pour the passion fruit curd over the top of the whipped cream.
17.Garnish with additional passion fruit pulp and serve.
