Ingredients

60 g butter
1 cup dark brown sugar
1/3 cup water
1 teaspoon lemon juice
420 g apricots , drained
75 g butter , extra
1/2 cup raw caster sugar
2 eggs , lightly beaten
1/2 cup almond meal
3/4 cup self raising flour , sifted
1/2 teaspoon ground cinnamon , sifted
1/4 teaspoon ground cardamom , sifted
1/3 cup milk
Apricot Upside Down Puddings are a unique twist on the traditional upside-down cake recipe, using apricots as a base. Instructions

1.Preheat oven to 180°C. Grease 6 muffin cups (¾ cup/185ml capacity) and place onto a baking tray.
2.In a small saucepan, combine 60g butter, brown sugar, water and lemon juice. Stir over low heat until butter melts and sugar dissolves. Increase heat to high and let the caramel come to the boil. Reduce heat to low and let mixture simmer for 2 minutes.
3.Divide caramel mixture evenly amongst greased muffin cups. Slice apricot halves on an angle into 4 slices each and arrange in a circular pattern on top of caramel.
4.In a bowl, beat extra butter and caster sugar until light and creamy. Add eggs and almond meal and mix well. Stir in flour, spices and milk, mixing until just combined.
5.Spoon mixture over apricots in muffin cups. Bake in oven for 25 minutes or until golden and cooked through. Remove from oven and stand for 2 minutes before turning out onto serving plates.
6.Serve hot with ice-cream or cream, if desired.
