Ingredients

1 long green chili , halved , seeds removed
1 cup fresh cooked crabmeat
2 teaspoons grated fresh ginger
6 green onions , thinly sliced
3 eggs
2 teaspoons soy sauce
1 teaspoon fish sauce
2 tablespoons oyster sauce
1 cup snow pea sprouts ( see note ) or 1 cup pea shoots , trimmed ( see note )

Instructions

1.Chop half the green chili and mix with the crabmeat, ginger and all but 1 tablespoon of the sliced onions.
2.Spit the remaining chili half and slice it thinly.
3.Beat the eggs in a bowl with the soy, fish and oyster sauces.
4.Heat a non-stick frying pan over medium-high heat. Add the egg mixture and swirl to coat the pan. Cook for 1-2 minutes or until the edges set. Use a spatula to lift the edge of the omelette and let the uncooked egg run underneath, cooking for 2 minutes or until set.
5.Spoon the crab mixture over half the omelette and scatter with snow pea sprouts and remaining sliced onion
6.Fold omelette over filling and slide onto a plate. Scatter with sliced chili, if using, and serve immediately.
