1 1/2 kg chicken carcasses ( with some meat remaining )
6 cups water
1 large onion , quartered
1 large carrot , cut into around 12 pieces
1 teaspoon garlic , crushed
1 teaspoon ginger , grated
1 bay leaf
1 teaspoon celery seed

Instructions

1.Preheat the oven to 190C / 375F. Spread the chicken carcasses on a baking sheet lined with foil or parchment paper. Roast for 50-60 minutes until they are golden brown to properly develop flavor.
2.In a 4-quart pot, place the roasted chicken carcasses and cover with water. Add onions, carrots, garlic, ginger, bay leaf and celery seeds.
3.Bring the pot to the boil, then lower the heat and let it simmer for 2-3 hours to extract all the flavor.
4.Strain out the solids and discard. Let the stock cool to room temperature, then store in an airtight container in the refrigerator for up to 5 days or freeze for up to 3 months.
