1 tablespoon apricot jam
1 tablespoon honey
1/2 butternut squash , chopped 1 . 5 cm cubes
30 ml oil
salt
375 ml beef stock

Instructions

1.In a large pan, dry roast cumin seeds, turmeric, mustard seeds, black peppercorns, coriander seeds, chili powder, fennel seeds, and cinnamon until fragrant. Grind the spices to a fine powder.
2.In the same pan, heat oil and add chopped onion, garlic, ginger, and green chilies. Cook until softened.
3.Add chopped tomatoes and cook until they turn mushy.
4.Add the ground spices, beef, butternut squash, beef broth, apricot jam, honey, and salt. Mix everything well.
5.Bring everything to a boil, then reduce heat and simmer for 1.5 to 2 hours or until the beef and squash are tender.
6.Season the curry to taste.
7.Serve hot with rice or bread.
