4 cups fat-free chicken stock
2 cm piece fresh ginger , peeled , sliced
2 whole star anise
4 teaspoons soy sauce

1 green chili , divided

350 g boneless white fish fillets , skin removed , roughly chopped
1/2 cup fresh coriander leaves , chopped
1 teaspoon finely grated lime zest

200 g dried rice-stick noodles ( pad Thai )
1 small head of broccoli , cut into small florets
50 g snow peas , trimmed
1 bunch asparagus , woody ends removed , cut in half

Instructions

1.Start by making the soup base: In a large pot, bring the chicken stock, ginger, and star anise to a boil. Reduce heat and simmer for 15 minutes.
2.In a small bowl, mix together soy sauce, brown sugar, and half of the green chili. Add the mixture to the pot and simmer for 2-3 minutes.
3.In a food processor or blender, blend the garlic, fish, coriander, lime zest, and remaining half of the green chili until it forms a smooth paste. Season with salt and pepper.
4.Using wet hands, roll the fish paste into small balls, around 1 inch in diameter, and drop them into the soup. Simmer gently for 5-7 minutes, or until the fish balls are cooked through.
5.In a separate pot, cook the rice-stick noodles according to package instructions. Drain and set aside.
6.In a large pot of boiling salted water, blanch the broccoli, snow peas, and asparagus for 1-2 minutes. Drain and set aside.
7.To serve, divide the noodles, vegetables, and fish balls between the serving bowls. Ladle over the soup and top with fresh coriander and a squeeze of lime.
