Ingredients

1 tablespoon olive oil
1 small brown onion , finely chopped
1 -2 garlic clove , finely chopped
400 g mince chicken ( for Australians ) or 400 g just under 13 oz ground chicken ( for Americans )
100 g mushrooms or 100 g just over 3oz mushrooms , finely chopped
2 teaspoons plain flour
3/4 cup cream
2 tablespoons fresh chives , finely chopped
3 sheets ready-rolled shortcrust pastry
1 egg , lightly beaten
2 sheets premade puff pastry
2 teaspoons sesame seeds

Instructions

1.Preheat the oven to 200°C (400°F) and line a 12 cup muffin tray with pastry.
2.Heat the oil in a large frying pan over medium heat. Cook onion and garlic for 2 minutes or until soft and translucent. Add chicken mince and mushrooms to the frying pan and stir until browned.
3.Add flour to the meat, stir for 1 minute or until combined. Gradually add cream, stirring, until sauce comes to the boil. Simmer for 1 minute or until mixture thickens slightly. Stir in chives and season with salt and pepper.
4.Spoon chicken and mushroom mixture into crusts. Cut circles from puff pastry and place one over each pie. Brush egg and sprinkle sesame seeds on top of each pie.
5.Bake for 25 minutes or until the skewer comes out clean when the pies are tested.
