Ingredients

6 large egg whites , at room temperature
1 teaspoon cream of tartar
1/4 teaspoon salt
1 1/4 cups granulated sugar
2 cups granulated sugar
1 cup water
1 vanilla bean , split and seeds scraped
2 large navel oranges
1 1/2 lbs cranberries
2 cups heavy cream
2 tablespoons confectioners ' sugar
mint sprig , for garnish

Instructions

1.Preheat oven to 250°F.
2.With an electric mixer, beat egg whites, cream of tartar and salt until soft peaks form.
3.Gradually beat in 1 1/4 cups granulated sugar, about 1 tablespoon at a time, until stiff, glossy peaks form.
4.Spoon meringue onto a parchment-lined baking sheet in 12 separate mounds.
5.Use a spoon to form hollows in the centers of the mounds.
6.Bake for 2 hours. Turn off the oven, prop open the door and let the meringues cool completely.
7.In a medium saucepan, bring 2 cups granulated sugar, water and vanilla bean and seeds to a boil over high heat.
8.Reduce heat and simmer for 5 minutes.
9.Zest and juice 2 navel oranges.
10.Add cranberries to the sugar syrup and cook over medium heat for 7 to 10 minutes, until the cranberries begin to pop.
11.Stir in the orange juice and zest and continue to cook for an additional 2 to 3 minutes, until the sauce has thickened.
12.In a large bowl, beat heavy cream and confectioners' sugar until soft peaks form.
13.To assemble, place each meringue on a dessert plate, fill with whipped cream and top with cranberry-orange sauce.
14.Garnish with mint sprigs if desired.
