Ingredients

1 cup self-raising flour or 1 cup gluten-free blended self-raising flour
1/2 cup raw sugar
1/2 cup desiccated coconut
1/2 cup dried dates , finely chopped
1/2 cup pecans , finely chopped
125 g butter , melted
1 tablespoon golden syrup
1 egg , lightly beaten
1 1/2 cups icing sugar
20 g butter , softened
2 tablespoons lemon juice

Instructions

1.Preheat the oven to 180°C (160°C fan forced).
2.Grease and line 18cm x 28cm rectangular slice pan with baking paper.
3.In a large bowl, mix together the self-raising flour (or gluten-free blended self-raising flour), raw sugar, desiccated coconut, chopped dates, and chopped pecans.
4.In a separate bowl, whisk together the melted butter, golden syrup and lightly beaten egg until well combined.
5.Add the wet ingredients to the dry ingredients and mix well.
6.Spoon the mixture into the prepared pan and press down firmly.
7.Bake for 20-25 minutes or until golden brown.
8.Set aside to cool.
9.To make the icing, sift the icing sugar into a bowl. Add the softened butter and lemon juice. Mix until smooth.
10.Spread the icing over the cooled slice.
11.Cut into small squares and serve.
