Ingredients

1 1/2 cups caster sugar ( Confectioners sugar )
1/2 cup water
1/2 cup hot tap water
1 tablespoon gelatin
2 cups of toasted coconut or 2 cups of coloured coconut
Aussie Marshmallows are a popular, versatile dessert in Australia. Instructions

1.In a large bowl, mix caster sugar and water together and stir until the sugar dissolves.
2.Add gelatin to the hot tap water in another bowl and mix until it dissolves.
3.Pour the gelatin mixture into the sugar syrup and whisk until perfectly combined.
4.Using an electric beater, beat the mixture on high for 8-12 minutes until it triples in volume and becomes thick and sticky.
5.Grease a large baking dish with oil and sprinkle half of the toasted or coloured coconut at the bottom of the dish.
6.Pour the marshmallow mixture on top of the coconut and spread evenly.
7.Sprinkle the remaining coconut on top of the mixture and let it sit for 3-4 hours for the marshmallow to cool and set.
