Ingredients

125 g plain sweet biscuits , suitable for cheesecake bases ( Arnott 's Granita biscuits for Australians )
60 g butter , melted
200 g fresh ricotta , low fat is fine ( I 've always found that it makes no appreciable difference to the taste )
60 ml honey
2 eggs
90 g Greek yogurt or 90 g natural yoghurt ( 1/3 cup )
85 g mascarpone
1/2 teaspoon ground cinnamon
45 g pine nuts
cinnamon sugar , to dust

Instructions

1.Preheat oven to 180°C (160°C fan-forced). Grease and line a 12-hole muffin tin.
2.Process biscuits in a food processor until they resemble fine breadcrumbs. Add melted butter and pulse until combined.
3.Press mixture into the base of prepared muffin tins and refrigerate for 20 minutes.
4.In a separate bowl, mix ricotta, honey, egg, Greek yogurt, mascarpone, and ground cinnamon together until smooth.
5.Spoon mixture into prepared muffin tins and sprinkle with pine nuts.
6.Bake for 18-20 minutes, until golden and set.
7.Allow to cool before dusting with cinnamon sugar.
