Ingredients

1 tablespoon olive oil
1 brown onion ( chopped )
1 garlic clove ( minced )
500 g beef mince
1 1/2 cups frozen mixed vegetables ( see notes at end or directions )
2 tablespoons barbecue sauce
2 tablespoons tomato paste
8 sheets phyllo pastry
cooking spray ( olive oil )
These Beef and Vegetable Filo Pies are a delicious and hearty meal perfect for dinner on cooler nights. Instructions

1.Preheat oven to 180°C.
2.In a pan, heat oil over medium-high heat. Add onion and garlic until softened.
3.Add beef and cook until browned, stir in mixed vegetables, barbecue sauce and tomato paste. Remove from heat.
4.Spray each sheet of phyllo pastry with cooking spray before lining and moulding into muffin tin.
5.Spoon the beef mixture into the pastry cases. Gather pastry edges together at top (like a sack) and twist to seal the top.
6.Bake in oven for 15-20 minutes or until pastry is golden and filling heated through.
