Ingredients

4 fresh poblano chile peppers
1/2 pound lean ground beef

3 eggs , separated
1 cup shredded mozzarella cheese
2 roma ( plum ) tomatoes , chopped
1/2 cup all-purpose flour
1 cup corn oil

Instructions

1.Preheat the oven to 375°F (190°C).

5.In a bowl, beat the egg whites until stiff peaks form. In a separate bowl, beat the egg yolks until pale yellow. Fold the egg yolks into the beaten egg whites.
6.Stuff the peppers with the beef mixture and divide the cheese and chopped tomatoes evenly among the peppers. Secure the slits in the peppers with toothpicks. Coat each stuffed pepper in flour, shaking off any excess.
7.In a large skillet, heat the oil over medium-high heat. Dip each flour-coated pepper in the egg mixture to coat and then carefully place it in the hot oil. Fry each pepper until golden brown, about 2-3 minutes on each side.
8.Once all of the peppers are cooked, place them in a baking dish and bake them for 10-15 minutes, until the cheese is melted and bubbly.
